Ingredients

  • 500 grams eggplants (baigan)
  • 2 tablespoons mustard oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 medium onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 2 tablespoons coriander leaves, chopped
  • 1 tablespoon fresh lemon juice

Directions

Step 1

Wash the eggplants thoroughly and chop them into bite-sized cubes. Set aside.

Step 2

Heat mustard oil in a large pan over medium heat. Add the cumin and mustard seeds and let them crackle for about 30 seconds.

Step 3

Add the finely chopped onions and sauté until they turn golden brown, about 5-6 minutes.

Step 4

Stir in the green chilies and ginger-garlic paste, sauté for another 2 minutes until the raw smell of the garlic disappears.

Add the chopped eggplant pieces to the pan and mix well.

Sprinkle in turmeric powder, coriander powder, red chili powder, and salt. Mix everything gently to coat the eggplants with the spices.
