Ingredients

  • 2 large eggplants
  • 0.25 cup tahini
  • 2 tablespoons lemon juice

  • 2 small garlic cloves

  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat the oven to 400°F (200°C).

Pierce the eggplants several times with a fork and place them on a baking sheet.

Roast the eggplants in the oven for about 45 minutes, or until they are soft and the skin is charred.
