  • 4 pieces Chicken thighs
  • 500 ml Coconut water
  • 2 stalks Lemongrass
  • 1 teaspoon Turmeric powder
  • 4 cloves Garlic
  • 1 inch Galangal
  • 3 leaves Kaffir lime leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 100 ml Cooking oil

Directions

Step 1

Peel and crush the garlic cloves. Thinly slice the galangal and smash the lemongrass stalks to release flavor.

Step 2

In a large pot, combine the coconut water, crushed lemongrass, sliced galangal, and peeled garlic. Add the turmeric powder, kaffir lime leaves, salt, and white pepper.

Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to a simmer.

Add the chicken thighs to the pot. Ensure they are submerged in the liquid.

Cover the pot and allow the chicken to poach for about 25 minutes or until fully cooked through and tender.

Once the chicken is cooked, remove the thighs from the pot, letting any excess liquid drip off.
