Ingredients

  • 2 cups Rolled oats
  • 0.5 cup Unsweetened shredded coconut
  • 0.5 cup Dried apricots
  • 0.5 cup Raisins
  • 0.5 cup Raw sunflower seeds
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 0.33 cup Coconut oil, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line with paper liners.

Step 2

In a large mixing bowl, combine the rolled oats, unsweetened shredded coconut, sunflower seeds, chia seeds, flaxseed meal, baking soda, cinnamon, nutmeg, and salt. Stir well to ensure evenly distributed dry ingredients.

Step 3

Chop the dried apricots into small pieces and add to the bowl along with the raisins and chopped walnuts. Mix until the fruits and nuts are well-incorporated with the dry ingredients.

Step 4

In a separate bowl, whisk together unsweetened applesauce, melted coconut oil, and vanilla extract until smoothly blended.

Step 5

Pour the wet ingredients into the dry ingredients and stir with a spatula or large spoon until the mixture is thoroughly combined and sticky.

Step 6

Spoon the batter into the prepared mini muffin tin, filling each cup to the top and pressing down lightly to ensure they hold together.

Step 7

Bake in the preheated oven for 10–12 minutes, or until the edges become golden and slightly firm to touch.

Step 8

Remove from oven and allow to cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Step 9

Store the sugar-free Aussie bites in an airtight container at room temperature for up to a week, or refrigerate for extended freshness.
