  • 0.5 cup dried white beans
  • 0.25 cup brown rice
  • 0.5 cup dried apricots, chopped
  • 0.5 cup dried figs, chopped
  • 0.5 cup raisins
  • 0.25 cup dried currants
  • 1 medium peeled, grated apple
  • 1 tablespoon orange zest
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 cup walnuts, chopped
  • 0.5 cup pomegranate seeds
  • 3 liters water
  • 0.25 teaspoon salt

Directions

Step 1

Rinse the wheat berries thoroughly under running water. Place them in a large pot with 3 liters of water. Bring to a boil and simmer for about 30 minutes.

Step 2

In separate bowls, soak the dried beans and white beans overnight. Drain and rinse them the next day. Cook them separately until tender and set aside.

Step 3

After the wheat berries have been cooking for 30 minutes, add the cooked beans, white beans, and brown rice to the pot with the wheat berries.

Step 4

Add the chopped apricots, figs, raisins, and currants to the pot. Stir to combine and continue to simmer for an additional 30 minutes.

Step 5

Peel and grate the apple, then add it to the mixture along with the orange zest, ground cinnamon, and ground cloves.

Step 6

Continue to cook for another 15 minutes, stirring occasionally, until the mixture thickens to a porridge-like consistency.

Step 7

Add a pinch of salt to enhance the flavors, ensuring it is well mixed.

Step 8

Remove from heat and let the pudding cool for 10 minutes.

Step 9

Ladle Asure into serving bowls and garnish with chopped walnuts and pomegranate seeds.

Step 10

Serve the Asure at room temperature or chilled. It can be stored in the refrigerator for up to 4 days.
