Ingredients

  • 1 cup White rice
  • 2 cups Water
  • 3 cups Unsweetened almond milk
  • 1 whole Cinnamon stick
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Granulated erythritol
  • 1 teaspoon Ground cinnamon
  • 0.25 cup Raisins (optional)

Directions

Step 1

Rinse the white rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized saucepan, bring 2 cups of water to a boil. Add the rinsed rice, reduce heat to low, cover, and let simmer for 15 minutes or until the water is absorbed and the rice is tender.

Step 3

Stir in the almond milk, cinnamon stick, vanilla extract, and salt. Increase heat to medium-high and bring to a gentle boil while stirring frequently.

Step 4

Once boiling, reduce the heat to low and let the mixture simmer gently for 20 minutes or until the rice is very tender and the mixture has thickened, stirring occasionally.

Remove the cinnamon stick. Stir in granulated erythritol until dissolved. Add the raisins if using and continue to cook for an additional 5 minutes.
