Ingredients

  • 2 medium Fresh apples (preferably Granny Smith or Honeycrisp)
  • 1 tablespoon Lemon juice
  • 1 teaspoon Ground cinnamon
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Unsweetened applesauce
  • 0.75 cup Milk (dairy or unsweetened almond milk)
  • 1 teaspoon Vanilla extract
  • 0.25 cup Unsalted butter, melted
  • 0.5 cup Stevia or erythritol baking blend
  • 2 tablespoons Coconut oil

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a donut pan with coconut oil.

Step 2

Peel, core, and dice the apples into small cubes. Toss them in a small bowl with lemon juice and 1/2 teaspoon of ground cinnamon. Set aside.

Step 3

In a large mixing bowl, whisk together flour, baking powder, 1/2 teaspoon of ground cinnamon, and salt.

Step 4

In a separate bowl, beat the eggs until frothy. Add unsweetened applesauce, milk, vanilla extract, melted butter, and the stevia or erythritol blend, mixing until well combined.

Step 5

Pour the wet ingredients into the dry ingredients, mixing gently until batter is smooth. Fold in the prepared apple pieces until evenly distributed.

Step 6

Fill donut molds about two-thirds full with the batter. Use a spoon to smooth out the tops.

Step 7

Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Step 8

Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Optional: For extra cinnamon flavor, you can lightly brush the cooled donuts with a little melted coconut oil and dust them with additional ground cinnamon.
