Ingredients

  • 250 g Whole wheat flour
  • 200 g Unsalted butter
  • 7 g Yeast
  • 1 tsp Salt
  • 150 ml Warm water
  • 1 Egg
  • 2 medium Green apples
  • 1 tbsp Lemon juice
  • 1 tsp Ground cinnamon
  • 1 tsp Stevia
  • 1 Egg (for wash)
  • 1 tbsp Almond milk

Directions

Step 1

Combine warm water and yeast in a small bowl. Let it sit for 10 minutes until frothy.

Step 2

In a large mixing bowl, combine whole wheat flour and salt. Create a well in the center and add the yeast mixture and one egg, and mix until a dough forms.

Step 3

Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Shape into a ball, place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Step 4

While the dough rises, prepare the apple filling. Peel and finely chop the apples, then toss them in a pan with lemon juice, stevia, and ground cinnamon. Cook over medium heat for 5-7 minutes until soft. Set aside to cool.

Punch the dough down and roll it into a rectangle on a floured surface. Place the butter between two sheets of parchment paper and flatten it into a thin rectangle 2/3 the size of the dough.

Place the butter slab on two-thirds of the rolled dough and fold the uncovered third over the butter, then fold the other third on top like a letter fold. Rotate 90 degrees and roll out again, then perform the fold again. Wrap in plastic wrap and chill for 30 minutes.

Repeat the rolling, folding, and chilling process two more times to build the layers.

Roll out the chilled dough into a large rectangle 1/4 inch thick. Cut into 8 triangles.

Place a tablespoon of apple filling at the wide base of each triangle and roll up towards the narrow tip, tucking the tip under the croissant.

Step 10

Place croissants on a baking sheet lined with parchment paper. Mix one egg with almond milk for an egg wash and brush over the croissants.

Step 11

Preheat oven to 200°C (392°F). Allow the croissants to rise for an additional 15 minutes before baking.

Step 12

Bake the croissants for 15-20 minutes, or until golden brown. Cool on a wire rack before serving.
