Ingredients

  • 60 ml apple cider vinegar
  • 120 ml extra virgin olive oil
  • 15 ml Dijon mustard
  • 1 clove garlic, minced
  • 15 ml lemon juice, freshly squeezed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 15 ml water

Directions

Step 1

In a medium-sized mixing bowl or a glass jar with a lid, combine the apple cider vinegar, extra virgin olive oil, and Dijon mustard.

Step 2

Add the minced garlic and freshly squeezed lemon juice to the vinegar mixture.

Step 3

Season with salt, freshly ground black pepper, dried oregano, and dried basil.

Step 4

Pour in the water to slightly dilute the mixture, making it less sharp.

Step 5

Whisk the mixture vigorously until all ingredients are well combined and the vinaigrette is smooth and slightly emulsified. If using a jar, secure the lid tightly and shake vigorously.

Step 6

Taste the vinaigrette and adjust seasoning if necessary, adding more salt or pepper as preferred.

Step 7

Transfer the vinaigrette to a serving container or refrigerate in an airtight jar for up to one week.

Step 8

Shake or stir the vinaigrette before each use to mix any settled ingredients.
