In a medium saucepan, combine the heavy cream, whole milk, and erythritol. Place over medium heat and stir occasionally until the mixture begins to steam, but do not let it boil.
In a separate bowl, whisk the egg yolks until smooth. Slowly add about 1/2 cup of the hot cream mixture to the yolks, whisking constantly to temper the eggs.
Gradually pour the tempered yolks back into the saucepan with the remaining cream mixture, stirring constantly.
Continue to cook over medium heat, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon. This should take about 5-7 minutes.
