Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 3 tablespoons Oil (such as vegetable or mustard oil)
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 tablespoon Ginger-garlic paste
  • 1 medium Green chili
  • 1 large Tomato
  • 1 teaspoon Salt
  • 1 teaspoon Garam masala
  • 2 tablespoons Cilantro

Directions

Step 1

Wash the cauliflower and cut it into small florets. Peel the potatoes and cut them into 1-inch cubes.

Step 2

Heat the oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until aromatic.

Step 3

Add the ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears.

Step 4

Finely chop the green chili and tomato, then add them to the pan. Cook for about 2-3 minutes until the tomato becomes soft.

Step 5

Add turmeric powder, coriander powder, and red chili powder. Stir well to combine the spices with the tomato mixture.

Step 6

Add the potato cubes and cauliflower florets to the pan. Mix everything well so that the vegetables are coated with the spices.

Step 7

Add salt and about 1/4 cup of water to the pan. Cover with a lid and let it cook for about 15-20 minutes or until the potatoes and cauliflower are tender, stirring occasionally.

Step 8

Once the vegetables are cooked, uncover the pan and sprinkle the garam masala over the top. Stir gently to combine.

Step 9

Chop the cilantro and sprinkle it over the finished dish for a fresh, aromatic touch.

Step 10

Serve hot with roti, naan, or steamed rice as desired.
