Ingredients

  • 250 grams Okra (Bindi)
  • 200 grams Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin Seeds
  • 0.5 teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Red Chili Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Garam Masala
  • 2 tablespoons Fresh Coriander Leaves

Directions

Step 1

Wash the okra thoroughly and pat dry. Trim the ends and cut them into 1-inch pieces.

Step 2

Peel the potatoes and cut them into small cubes.

Step 3

Heat the olive oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

Step 4

Add the cubed potatoes to the pan and sauté for about 5-7 minutes, or until they start to turn golden brown.

Step 5

Sprinkle turmeric powder over the potatoes and stir well to coat them evenly.

Step 6

Add the chopped okra to the pan and mix well with the potatoes.

Step 7

Season the mixture with coriander powder, red chili powder, and salt. Stir the vegetables to evenly distribute the spices.

Step 8

Lower the heat and cover the pan. Allow the vegetables to cook for about 15 minutes, stirring occasionally, until the potatoes and okra are tender and cooked through.

Step 9

Once cooked, sprinkle garam masala over the vegetables and mix well.

Step 10

Garnish with freshly chopped coriander leaves before serving.

Step 11

Serve the Sugar-Free Aloo Bindi Fry hot with roti or as a side dish with rice.
