Ingredients

  • 500 ml unsweetened almond milk
  • 10 g unflavored gelatin powder
  • 50 ml water
  • 1 tsp almond extract
  • 2 tsp liquid stevia (or zero-calorie sweetener of choice)
  • 20 g blanched almonds (optional, for garnish)

Directions

Step 1

In a small bowl, dissolve the unflavored gelatin powder in 50 ml of cold water. Let it sit for about 5 minutes to allow the gelatin to bloom.

Step 2

In a medium saucepan over medium heat, add the unsweetened almond milk. Warm it gently until small bubbles begin to form around the edges, but do not let it boil.

Step 3

Add the dissolved gelatin mixture to the saucepan, stirring constantly until the gelatin is completely melted into the almond milk.

Step 4

Stir in the almond extract and liquid stevia. Mix well to ensure the sweetener and extract are evenly distributed.

Step 5

Remove the saucepan from the heat and strain the mixture through a fine mesh sieve to remove any undissolved gelatin or lumps.

Step 6

Pour the almond milk mixture into individual serving molds or a large dish, depending on your preference.

Step 7

Let the mixture cool to room temperature, then cover with plastic wrap and refrigerate for at least 4 hours or until fully set.

Step 8

Once set, unmold the almond jelly by gently running a thin knife around the edges and inverting onto serving plates.

Step 9

Garnish with blanched almonds if using, and serve chilled.
