Ingredients

  • 120 ml Unsweetened almond milk
  • 30 g Unsweetened cocoa powder
  • 150 g Almond flour
  • 2 large Eggs
  • 10 g Baking powder
  • 5 ml Vanilla extract
  • 50 g Stevia or erythritol sweetener
  • 50 g Coconut oil
  • 2 ml Almond extract
  • 50 g Chopped almonds
  • 70 g Dark chocolate chips (sugar-free)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a small saucepan, melt the coconut oil over low heat. Once melted, remove it from the heat and let it cool slightly.

Step 3

In a medium-sized bowl, whisk together the almond flour, unsweetened cocoa powder, baking powder, and the stevia or erythritol sweetener.

In another bowl, beat the eggs until frothy. Add the vanilla extract, almond extract, and the cooled coconut oil, and whisk until well combined.

Slowly pour the egg mixture into the dry ingredients, stirring gently until just combined. Do not over mix.
