Ingredients

  • 1.5 cups raw almonds
  • 4 tablespoons butter
  • 1 cup sugar-free sweetener (such as erythritol or monk fruit)
  • 0.25 cup water
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda

Directions

Step 1

Line a large baking sheet with parchment paper or a silicone baking mat and set aside.

Step 2

In a medium saucepan, combine the sugar-free sweetener and water. Stir well to dissolve the sweetener completely.

Step 3

Add the butter and salt to the saucepan, and place it over medium-high heat.

Step 4

Bring the mixture to a boil, stirring frequently to prevent scorching.

Step 5

Once boiling, reduce the heat to medium and attach a candy thermometer to the side of the saucepan.

Step 6

Continue to cook without stirring until the mixture reaches 300°F (150°C) on the candy thermometer. This is the hard crack stage.

Step 7

While waiting for the mixture to reach temperature, spread the raw almonds evenly on the prepared baking sheet.

Step 8

Once the sweetener mixture reaches 300°F, quickly remove the saucepan from the heat and stir in the vanilla extract and baking soda. The mixture will bubble up slightly.

Step 9

Immediately pour the hot mixture over the almonds on the baking sheet, using a spatula to spread it evenly if necessary.

Step 10

Allow the brittle to cool completely at room temperature until it is hard, about 30 minutes.

Step 11

Once set, break the brittle into pieces using your hands or the edge of a spoon.

Step 12

Store the sugar-free almond brittle in an airtight container at room temperature for up to two weeks.
