Ingredients

  • 2 medium Carrots
  • 2 medium Cucumbers
  • 1 medium Red bell pepper
  • 4 small Shallots
  • 0.5 head Cauliflower
  • 1 cup White vinegar
  • 1 cup Water
  • 1 tablespoon Salt
  • 1 teaspoon Stevia
  • 1 teaspoon Turmeric powder
  • 1 inch piece Fresh ginger
  • 1 whole Red chili
  • 0.5 teaspoon Mustard seeds

Directions

Step 1

Peel the carrots and ginger. Slice the carrots, cucumbers, and red bell pepper into thin batons. Cut the cauliflower into small florets. Slice the shallots thinly. Set all vegetables aside.

Step 2

In a medium saucepan, combine the white vinegar, water, salt, stevia, turmeric powder, and the sliced ginger. Bring to a boil over medium heat, stirring to ensure the salt dissolves completely.

Step 3

Once the vinegar solution is boiling, add the mustard seeds and the whole red chili. Reduce heat and let it simmer for 2 minutes, stirring occasionally.

In a large glass or ceramic bowl, combine all the prepared vegetables: carrots, cucumbers, bell peppers, shallots, and cauliflower.
