Ingredients

  • 2 pcs boneless, skinless chicken breasts
  • 8 oz egg noodles
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1.5 cups Ritz crackers
  • 0.5 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried parsley

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Bring a large pot of salted water to a boil, and cook the egg noodles according to the package instructions. Drain and set aside.

Step 3

While the noodles are cooking, place the chicken breasts in a separate pot of boiling water. Cook for 10-12 minutes or until fully cooked. Remove from water, shred the chicken with two forks, and set aside.

Step 4

In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, shredded cheddar cheese (reserve 1/2 cup for topping), milk, salt, pepper, and parsley. Mix until smooth.

Step 5

Add the cooked egg noodles and shredded chicken into the mixture, ensuring everything is evenly coated.

Step 6

Lightly grease a 9x13-inch casserole dish with butter or nonstick cooking spray. Pour the mixture from the bowl into the dish, spreading it out evenly.

Step 7

In a small saucepan, melt the butter over low heat. Crush the Ritz crackers and mix them into the melted butter until they are evenly coated. This will be the topping.

Step 8

Sprinkle the buttered Ritz cracker mixture over the casserole, followed by the reserved shredded cheddar cheese.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the topping is golden brown.

Step 10

Remove from the oven and let the casserole rest for 5 minutes before serving. Enjoy!
