Directions

Step 1

In a medium saucepan, combine 1 cup of the heavy cream and all the granulated sugar. Heat over medium heat, stirring constantly, until the sugar completely dissolves (about 3-5 minutes). Do not let the mixture come to a boil.

In a separate mixing bowl, whisk the egg yolks together until slightly thickened.

Temper the egg yolks by slowly drizzling in about 1/2 cup of the warm cream mixture, whisking continuously to prevent scrambling.
