Ingredients

  • 2 tablespoons Olive oil
  • 12 ounces Andouille sausage, sliced
  • 1 large Yellow onion, diced
  • 1 large Green bell pepper, diced
  • 2 Celery stalks, diced
  • 4 Garlic cloves, minced
  • 14.5 ounces Diced tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 4 cups Chicken broth
  • 2 cups Long-grain rice, uncooked
  • 2 Bay leaves
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 pound Shrimp, peeled and deveined
  • 8 ounces Lump crab meat
  • 3 Green onions, sliced
  • 0.25 cup Fresh parsley, chopped
  • 1 dash Hot sauce (optional)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the sliced andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

Step 3

In the same pot, sauté the diced onion, green bell pepper, and celery until softened, about 5 minutes.

Step 4

Stir in the minced garlic and cook for 1-2 minutes until fragrant.

Step 5

Add the diced tomatoes, tomato paste, chicken broth, and uncooked rice to the pot. Stir to combine.

Step 6

Season with bay leaves, paprika, dried thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a boil.

Step 7

Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and most of the liquid is absorbed.

Step 8

Stir in the shrimp and cook for 5-7 minutes, or until the shrimp turn pink and are fully cooked.

Step 9

Gently fold in the lump crab meat, being careful not to break it up too much.

Step 10

Remove the bay leaves and discard them.

Step 11

Garnish with sliced green onions and chopped parsley. Add a dash of hot sauce if desired.

Step 12

Serve hot and enjoy your seafood jambalaya!
