Preheat your oven to 350°F (175°C).
Place the chocolate sandwich cookies into a food processor and pulse until they form fine crumbs. Alternatively, place the cookies in a sealed plastic bag and crush them with a rolling pin.
In a medium bowl, combine the cookie crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
Press the crumb mixture into the bottom and up the sides of a 9-inch pie pan to form a crust. Use the back of a spoon or the bottom of a measuring cup to press it down firmly.
Bake the crust in the preheated oven for 8-10 minutes. Remove from the oven and let it cool completely.
In a small saucepan, combine the semisweet chocolate chips and sweetened condensed milk. Heat over low heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.
Pour the chocolate fudge mixture over the cooled cookie crust, spreading it evenly. Let it cool for a few minutes, then transfer to the freezer for about 10 minutes, or until the fudge layer is firm.
Once the fudge layer is set, spread the softened vanilla ice cream evenly on top of it. Smooth the top with a spatula.
Cover the pie with plastic wrap or aluminum foil and freeze until completely firm, about 2-4 hours or overnight.
Before serving, remove the pie from the freezer and let it sit at room temperature for 5-10 minutes to soften slightly.
Optionally, top the pie with whipped cream, a drizzle of chocolate syrup, chopped nuts, and maraschino cherries for garnish.
Slice the pie and serve immediately. Store any leftovers in the freezer.
