Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Unsalted butter (softened)
  • 2 Eggs
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 teaspoons Vanilla extract
  • 0.75 cup Milk (preferably whole)
  • 0.75 cup Light brown sugar (for streusel)
  • 2 teaspoons Cinnamon (ground, for streusel)
  • 0.5 cup All-purpose flour (for streusel)
  • 0.25 cup Unsalted butter (cold, cubed, for streusel)

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly grease a 9-inch square baking pan or line it with parchment paper.

Step 2

In a medium mixing bowl, whisk together 2 cups of all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, to the butter and sugar mixture, beating well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry flour mixture into the wet mixture in three parts, alternating with the milk. Begin and end with the flour mixture. Mix just until combined; avoid over-mixing.

Step 6

Pour the batter into the prepared baking pan and spread it evenly using a spatula.

Step 7

In a separate small bowl, prepare the streusel topping by combining the brown sugar, cinnamon, and 0.5 cups of flour. Cut in the cold cubed butter with a pastry cutter or two forks until the mixture is crumbly.

Step 8

Sprinkle the streusel topping evenly over the cake batter in the pan.

Step 9

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
