Ingredients

  • 2 whole birds Cornish game hens
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves
  • 1 whole Lemon
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 cup Chicken broth
  • 2 tablespoons Butter

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove any giblets from the game hens and pat them dry with paper towels.

Step 3

Drizzle the hens with olive oil and rub it into the skin evenly on all sides.

Step 4

Mince two garlic cloves and rub them over the hens for added flavor.

Step 5

Cut the lemon into quarters. Stuff one quarter along with a sprig of rosemary and thyme into the cavity of each hen.

Step 6

Sprinkle the hens evenly with salt, black pepper, and paprika for seasoning.

Place the hens in a roasting pan breast-side up. Add the remaining lemon quarters and whole garlic cloves around the birds for extra aromatics.
