Ingredients

  • 6 pieces chicken thighs (bone-in, skinless preferred)

  • 1 large yellow onion, diced
  • 2 medium bell peppers (red and yellow), sliced
  • 4 cloves garlic cloves, minced
  • 8 ounces crimini mushrooms, sliced
  • 28 ounces canned crushed tomatoes
  • 1 cup chicken broth
  • 0.5 cup dry red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes (optional)
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until lightly browned. Transfer to the crock pot.

Step 2

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the diced onion and sauté until translucent, about 3 minutes.

Step 3

Add the bell peppers and garlic to the skillet and cook for another 2-3 minutes, stirring frequently. Transfer the mixture to the crock pot.
