Ingredients

  • 2 cups canned chickpeas (garbanzo beans)
  • 2 tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 3 medium tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 medium green chilies, finely chopped
  • 0.5 teaspoons turmeric powder
  • 1 teaspoon red chili powder
  • 2 teaspoons ground coriander
  • 1.5 teaspoons ground cumin
  • 1 teaspoon garam masala
  • 1 teaspoon amchur (dried mango powder)
  • 1 teaspoon salt
  • 0.5 cup fresh cilantro, chopped
  • 1.5 cups water
  • 1 tablespoon lemon juice

Directions

Step 1

Drain and rinse the canned chickpeas under cold water. Set aside.

Step 2

Heat the vegetable oil in a large pan or skillet over medium heat.

Step 3

Add the finely chopped onions and sauté until golden brown, about 7-8 minutes.

Step 4

Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.

Add the green chilies and chopped tomatoes, then cook for 5-6 minutes until the tomatoes soften and break down.

Stir in the turmeric powder, red chili powder, ground coriander, and ground cumin. Mix well and sauté for 1-2 minutes until the spices are aromatic.
