Ingredients

  • 16 pieces Jumbo pasta shells
  • 1 pound Ground beef
  • 1 packet Taco seasoning mix
  • 2 tablespoons Water
  • 4 ounces Cream cheese
  • 1 cup Salsa
  • 1.5 cups Shredded Mexican blend cheese
  • 2 tablespoons Cilantro (optional, for garnish)
  • 2 tablespoons Green onions (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool.

Step 3

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up into small pieces as it cooks. Drain any excess grease.

Step 4

Add the taco seasoning mix and 2 tablespoons of water to the cooked beef. Stir well to combine and let simmer for 1-2 minutes.

Reduce the heat to low and mix in the cream cheese. Stir until the cream cheese is melted and fully incorporated into the beef mixture. Remove the skillet from heat and allow the mixture to cool slightly.

Grease a 9x13-inch baking dish and spread 1/2 cup of the salsa evenly over the bottom.

Stuff each cooked pasta shell with about 2 tablespoons of the beef mixture and place them in the prepared baking dish, open side up.

Pour the remaining 1/2 cup of salsa evenly over the stuffed shells.
