  • 4 pieces ribeye steaks (1-inch thick)
  • 2 cups fresh spinach
  • 1 cup cremini mushrooms
  • 2 cloves minced garlic
  • 4 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 pieces toothpicks

Directions

Step 1

Lay the steaks flat on a cutting board. Using a sharp knife, cut a horizontal pocket into the side of each steak without cutting all the way through.

Step 2

Season the steaks inside and out with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Set aside.

Step 3

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the mushrooms and sauté for 3 minutes or until softened.

Add the minced garlic and fresh spinach to the skillet. Cook for another 2 minutes, stirring occasionally, until the spinach is wilted.
