Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 medium green bell peppers, chopped
  • 1 medium red bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 15 ounces diced tomatoes
  • 15 ounces tomato sauce
  • 1 cup white rice, uncooked
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Directions

Step 1

In a large pot, heat olive oil over medium heat. Add the ground beef and cook, breaking it into smaller pieces, until browned, about 5-7 minutes.

Step 2

Add the chopped onion, green bell peppers, red bell pepper, and garlic to the pot. Cook until the vegetables are tender, about 5 minutes.

Step 3

Pour in the beef broth, diced tomatoes, and tomato sauce. Stir to combine.

Step 4

Add the uncooked white rice, Italian seasoning, salt, and black pepper into the pot. Stir well.

Step 5

Bring the mixture to a boil, then reduce heat to low and simmer uncovered for 30-35 minutes, or until the rice is cooked and the soup has thickened to your preferred consistency.

Step 6

Taste and adjust seasoning if necessary.

Step 7

Stir in the chopped parsley before serving hot. Garnish with additional parsley if desired.
