Preheat the oven to 375°F (190°C).
Peel the outer layers of the Vidalia onions carefully, leaving them whole. Cut off the top 1/4 inch of each onion and a small sliver from the bottom so they sit flat in the baking dish.
Using a spoon or melon baller, gently hollow out the centers of each onion, leaving about 1/2 inch of the outer layer intact. Save the removed onion pieces for later use.
Chop half of the reserved onion pieces finely. (You’ll need about 1/4 cup chopped onion.)
In a medium skillet over medium heat, melt the butter. Add the chopped onion and cook until softened, about 3-4 minutes.
Add the ground sausage to the skillet and cook, breaking it into small pieces, until browned and fully cooked, about 6-8 minutes. Drain any excess grease.
Stir the cooked rice, shredded cheddar cheese, breadcrumbs, salt, black pepper, garlic powder, and paprika into the sausage mixture. Mix thoroughly and remove from heat.
Stuff each hollowed-out onion with the sausage and rice filling, packing it in firmly. Place the stuffed onions in a baking dish.
Cover the baking dish with aluminum foil and bake for 35 minutes.
After 35 minutes, remove the foil and bake for an additional 10-15 minutes, or until the onions are tender and the tops are golden brown.
Remove from the oven and let cool for 5 minutes. If desired, garnish with chopped fresh parsley before serving.
