Ingredients

  • 2 pounds Ground beef
  • 1 pound Ground pork
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Paprika
  • 2 cups Fresh spinach
  • 1.5 cups Shredded mozzarella cheese
  • 0.5 cup Parmesan cheese, grated
  • 1 cup Tomato sauce
  • 0.25 cup Ketchup
  • 1 tablespoon Brown sugar
  • 1 tablespoon Worcestershire sauce

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and lightly grease it.

Step 2

In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, eggs, onion, garlic, salt, black pepper, oregano, and paprika. Mix until well combined, but do not overwork the meat.

Step 3

In a skillet over medium heat, sauté the spinach until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

On a clean surface, lay a large piece of parchment paper. Spread the meat mixture out evenly into a rectangular shape, about 1 inch thick.

Step 5

Sprinkle the shredded mozzarella cheese and Parmesan cheese evenly over the center of the meat rectangle, leaving a 1-inch border around the edges.

Step 6

Spread the cooked spinach evenly over the cheese.

Step 7

Carefully roll the meat mixture from one long end to the other, using the parchment paper to help guide it into a log shape. Pinch the edges to seal the meatloaf and carefully transfer it onto the prepared baking sheet, seam side down.

Step 8

In a small bowl, mix together the tomato sauce, ketchup, brown sugar, and Worcestershire sauce to make a glaze.

Step 9

Spread half of the glaze evenly over the top of the meatloaf.

Step 10

Bake the meatloaf in the preheated oven for 55-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 11

Remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for an additional 5 minutes.

Step 12

Allow the meatloaf to rest for 10 minutes before slicing. Serve warm and enjoy!
