Ingredients

  • 3 large Green bell peppers
  • 1 pound Ground beef
  • 1 medium White or yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 cups Cooked white or brown rice
  • 14.5 ounces Canned diced tomatoes
  • 15 ounces Tomato sauce
  • 2 cups Shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the green bell peppers, remove the stems and seeds, and dice them into bite-sized pieces.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and softened, about 3 minutes.

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.

Step 5

Stir in the diced green peppers, diced tomatoes (including their juices), tomato sauce, cooked rice, Italian seasoning, salt, and black pepper. Mix well and let the mixture simmer for 5–7 minutes to allow the flavors to meld together.

Lightly grease a 9x13-inch casserole dish. Pour the beef and pepper mixture into the dish, spreading it out evenly.
