Ingredients

  • 170 grams unsalted butter
  • 150 grams granulated sugar
  • 100 grams light brown sugar
  • 300 grams all-purpose flour
  • 100 grams rolled oats
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 300 grams fruit preserves or jam (any flavor)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x13 inch (23x33 cm) baking pan with parchment paper, leaving overhang for easy removal.

Step 2

In a large mixing bowl, combine the butter (softened), granulated sugar, and light brown sugar. Mix until creamy and combined.

Step 3

Add the vanilla extract and stir until fully incorporated.

Step 4

In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring until a crumbly dough forms.

Step 6

Press two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.

Spread the fruit preserves or jam evenly over the crust, leaving a small border around the edges.

Scatter the remaining dough over the top of the jam layer, creating a streusel-like topping.

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.

Remove from the oven and allow the bars to cool completely in the pan.

Once cooled, lift the bars out of the pan using the parchment paper overhang and cut into 12 squares or rectangles.
