Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 cloves Garlic
  • 3 tablespoons Unsalted butter
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Cheddar cheese
  • 2 stalks Green onions (optional garnish)

Directions

Step 1

Peel and dice the russet potatoes into 1-inch chunks. Set them aside in a bowl of cold water to prevent browning.

Step 2

Peel and finely dice the yellow onion. Mince the garlic cloves.

Step 3

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5 minutes, until softened and translucent.

Step 4

Add the minced garlic to the pot and sauté for 1 minute, stirring frequently to prevent burning.

Drain the potatoes and add them to the pot. Pour in the vegetable broth and increase the heat to bring the mixture to a boil.
