Ingredients

  • 8 oz Elbow macaroni
  • 2 cups Corn kernels
  • 2 tbsp Olive oil
  • 1 tsp Ground cumin
  • 1 cup Mayonnaise
  • 1 cup Sour cream
  • 2 tbsp Lime juice
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Feta cheese, crumbled
  • 0.25 cup Cilantro, chopped
  • 0.25 cup Red onion, finely chopped

Directions

Step 1

Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

In a large skillet, heat olive oil over medium heat. Add the corn kernels and sauté until they become golden brown, about 5-7 minutes. Stir in ground cumin and cook for an additional 2 minutes. Remove from heat and let cool.

Step 3

In a large mixing bowl, whisk together mayonnaise, sour cream, lime juice, garlic powder, chili powder, salt, and black pepper until smooth and well combined.
