Ingredients

  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 1 cup Cotija cheese, crumbled
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Ground cumin
  • 0.25 cup Cilantro, chopped
  • 2 Scallions, sliced
  • 1 Jalapeño, seeded and finely diced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0 (for serving) Tortilla chips or sliced veggies

Directions

Step 1

Preheat a grill or a large skillet over medium-high heat.

Step 2

Drizzle the corn kernels with olive oil and season with salt and pepper.

Step 3

If using a grill, place the corn in a grill basket or a sheet of aluminum foil and grill for about 7-10 minutes, occasionally stirring until the corn is lightly charred. If using a skillet, cook the corn directly in the skillet until charred, about 7-10 minutes.

Remove the corn from the heat and let it cool slightly.
