Ingredients

  • 250 grams fresh strawberries
  • 200 grams all-purpose flour
  • 150 grams granulated sugar
  • 115 grams unsalted butter
  • 120 grams plain Greek yogurt
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 2 tablespoons (optional, for garnish) powdered sugar

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch cake pan and line the bottom with parchment paper.

Step 2

Wash, hull, and chop the strawberries into small pieces. Set them aside.

Step 3

In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 4

In a large mixing bowl, cream the butter and granulated sugar using a hand or stand mixer until light and fluffy (about 2-3 minutes).

Step 5

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 6

On low speed, add the yogurt and the dry ingredients to the wet ingredients in three alternating additions, starting and ending with the dry ingredients. Do not overmix.

Step 7

Gently fold in the chopped strawberries using a spatula until evenly distributed in the batter.

Step 8

Pour the batter into the prepared cake pan and spread it evenly. Smooth the top with a spatula.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.

Step 11

Once cooled, dust the top of the cake with powdered sugar (optional) before serving.
