  • 1 cup Strawberries, hulled and chopped
  • 2 tbsp Powdered sugar
  • 1 tbsp Lemon juice

Directions

Step 1

Preheat your oven to 325°F (163°C) and grease and flour a 10-inch bundt pan or tube pan.

In a medium saucepan over medium heat, combine the chopped strawberries, powdered sugar, and lemon juice. Cook for about 5–7 minutes, until the strawberries break down and the mixture thickens slightly. Remove from heat and blend into a smooth puree using an immersion blender or food processor. Set aside to cool to room temperature.

In a large mixing bowl, beat the unsalted butter and cream cheese together on medium speed until creamy and smooth, about 2 minutes.

Gradually add the granulated sugar, beating on medium speed until the mixture is light and fluffy, about 3–4 minutes.

Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
