Ingredients

  • 1 loaf (approximately 12 ounces) Pound cake or sponge cake
  • 4 cups Fresh strawberries
  • 2 tablespoons Granulated sugar
  • 2 cups Heavy cream
  • 3 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 6 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Wash and hull the strawberries, then slice them thinly. Place the sliced strawberries in a bowl and sprinkle with the granulated sugar. Toss gently to coat, and let sit for 10 minutes to macerate and release their juices.

Step 2

While the strawberries are macerating, prepare the whipped cream. In a large mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to whip the cream on medium-high speed until soft peaks form. Be careful not to overwhip.

Step 3

Cut the pound cake or sponge cake into 1-inch cubes. Set aside.

Step 4

In a large trifle dish or individual serving glasses, begin layering the ingredients. Start with a layer of cake cubes at the bottom. Spoon a layer of macerated strawberries and their juices over the cake cubes. Follow with a layer of whipped cream.

Step 5

Repeat the layers (cake, strawberries, whipped cream) until you reach the top of the dish or glass, finishing with a layer of whipped cream.

Step 6

Garnish the top with a few fresh strawberry slices and, if desired, a couple of fresh mint leaves for an extra touch of color and freshness.

Step 7

Chill the trifle in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Serve cold and enjoy!
