Ingredients

  • 2 sheets frozen puff pastry sheets
  • 2 cups fresh strawberries
  • 3 tablespoons granulated sugar
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon flour

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Lightly flour your work surface and unfold the frozen puff pastry sheets. Roll each sheet gently with a rolling pin to smooth out creases.

Step 3

Using a sharp knife or cookie cutter, cut the puff pastry sheets into 12 equal rectangles or circles (approximately 3x4 inches for rectangles).

Step 4

In a small bowl, beat the egg with 1 tablespoon of water to create an egg wash. Brush the tops of the puff pastry pieces lightly with the egg wash.

Step 5

Place the puff pastry pieces on the prepared baking sheet, spacing them at least 1 inch apart. Bake in the preheated oven for 12-15 minutes, or until golden brown and puffed. Let them cool completely on a wire rack.

Step 6

While the pastry bakes, hull and slice the strawberries. Toss them with 2 tablespoons of granulated sugar in a bowl and let them macerate for about 10 minutes.

Step 7

In a large mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

Step 8

Once the puff pastry is cooled, gently slice each piece in half horizontally to create a top and bottom layer.

Step 9

Spoon a layer of whipped cream onto the bottom half of each puff pastry piece, followed by a generous spoonful of macerated strawberries.

Step 10

Place the top half of the puff pastry over the strawberries to create a sandwich. Dust the tops with a little powdered sugar, if desired.

Step 11

Serve immediately and enjoy your light and flaky Strawberry Shortcake Puff Pastry!
