Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Using a pastry cutter or your fingers, cut the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs.
Pour in the heavy cream and gently mix with a spoon or spatula until the dough just comes together.
Turn the dough out onto a lightly floured surface and gently knead it a few times. Roll or pat the dough into a rectangle about 1 inch thick.
Using a biscuit cutter or the rim of a glass, cut the dough into rounds and place them on the prepared baking sheet.
Re-roll any scraps of dough and cut additional rounds. You should have about 6 biscuits.
Brush the tops of the biscuits with a little extra heavy cream, then bake in the preheated oven for 12–15 minutes, or until the tops are golden brown.
While the biscuits bake, toss the sliced strawberries in a bowl with 1/4 cup granulated sugar and 1 teaspoon vanilla extract. Let them sit and macerate for at least 15 minutes.
In a separate bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until soft peaks form.
Once the biscuits are baked and slightly cooled, split them in half horizontally using a serrated knife.
To assemble, place the bottom half of a biscuit on a plate, spoon a generous amount of macerated strawberries and their juices over it, add a dollop of whipped cream, and top with the other biscuit half. Repeat with the remaining biscuits.
Serve immediately and enjoy your old-fashioned strawberry shortcake!
