Ingredients

  • 450 g Fresh strawberries
  • 100 g Granulated sugar
  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 0.25 tsp Salt
  • 120 g Unsalted butter, cold and cubed
  • 180 ml Heavy cream
  • 1 tsp Vanilla extract
  • 2 tbsp Powdered sugar
  • 240 ml Whipping cream
  • 2 tsp Honey (optional, for added earthiness)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Wash and hull the strawberries, then slice them into quarters. Place them in a bowl and toss with 50g of granulated sugar. Set aside to macerate for at least 20 minutes.

Step 3

In a large mixing bowl, whisk together the flour, baking powder, remaining 50g of granulated sugar, and salt.

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Pour in the heavy cream and vanilla extract. Stir gently until the dough just comes together—be careful not to overmix.

Turn the dough out onto a lightly floured surface and knead it gently 2–3 times. Pat it into a rectangle about 2 cm thick, then use a round biscuit cutter or a glass to cut out 6 biscuits.
