Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 3 tablespoons granulated sugar

  • 0.5 cup ice water
  • 2 cups fresh strawberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 large egg
  • 1 tablespoon milk

Directions

Step 1

In a large bowl, mix the flour, 2 tablespoons of sugar, and salt. Add the cold butter in small pieces and blend using a pastry cutter or fingers until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, mixing until a dough forms. Do not overmix. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

While the dough is chilling, prepare the strawberry filling. Slice the strawberries and place them in a bowl. Mix with the remaining 1 tablespoon of sugar, lemon juice, and cornstarch. Set aside.
