Ingredients

  • 400 grams Fresh strawberries
  • 100 grams Granulated sugar
  • 250 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Unflavored gelatin
  • 2 tablespoons Cold water
  • 100 grams Crushed graham crackers
  • 5 leaves Fresh mint leaves (optional for garnish)

Directions

Step 1

Wash and hull the fresh strawberries. Set aside 100 grams of strawberries for layering and garnish, and puree the remaining 300 grams in a blender until smooth.

Step 2

In a small saucepan, combine the strawberry puree and granulated sugar. Heat over medium heat for about 4-5 minutes, stirring occasionally, until the sugar dissolves and the mixture thickens slightly. Remove from heat and let it cool to room temperature.

Step 3

In a small bowl, sprinkle the unflavored gelatin over the cold water and let it bloom for 5 minutes. Microwave the bloomed gelatin for 10 seconds to dissolve completely, then stir it into the cooled strawberry puree until fully combined.

Step 4

In a large mixing bowl, whip the heavy cream and vanilla extract using an electric mixer until stiff peaks form.

Step 5

Gently fold the strawberry mixture into the whipped cream in two additions, being careful not to deflate the cream. This forms your strawberry mousse.

Step 6

To assemble the parfait, start by adding a layer of crushed graham crackers at the bottom of each serving glass or jar. Follow with a layer of strawberry mousse.

Step 7

Slice the reserved 100 grams of strawberries and layer them on top of the mousse. Repeat the layers as desired, ending with a mousse layer on top.

Step 8

Refrigerate the assembled parfaits for at least 2 hours to allow the mousse to set.

Step 9

Before serving, garnish with fresh mint leaves and a slice of strawberry, if desired. Serve chilled.
