Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cornstarch
  • 300 grams Fresh strawberries
  • 200 milliliters Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.

Step 2

In a clean, dry mixing bowl, whisk the egg whites using an electric mixer on medium speed until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, while continuing to whisk on medium-high speed. Mix until the meringue is glossy and forms stiff peaks.

Step 4

Gently fold in the vanilla extract and cornstarch with a spatula until just combined.

Step 5

Spoon the meringue onto the prepared baking sheet to form six small nests, using the back of a spoon to create an indentation in the center of each.

Step 6

Bake the meringues in the preheated oven for 90 minutes, or until they are dry to the touch and easily pull away from the parchment paper. Turn off the oven and let the meringues cool completely inside with the door slightly ajar.

While the meringues cool, hull and slice the strawberries. Toss them with 1 tablespoon of powdered sugar and set aside to macerate for 10 minutes.

Whip the heavy cream with the remaining tablespoon of powdered sugar and the lemon zest until soft peaks form.

Step 9

Once the meringues are completely cool, top each nest with a dollop of whipped cream and a generous helping of strawberries.
