Ingredients

  • 2 cups Fresh strawberries
  • 0.75 cups Granulated sugar
  • 0.5 cups Water
  • 1 teaspoons Vanilla extract
  • 4 scoops Vanilla ice cream
  • 2 cups Club soda or sparkling water
  • 1 cup Whipped cream
  • 4 pieces Fresh strawberries (for garnish)

Directions

Step 1

Rinse and hull the fresh strawberries, then chop them into smaller pieces.

Step 2

In a medium saucepan, combine the chopped strawberries, granulated sugar, and water. Place over medium heat and bring to a simmer, stirring occasionally.

Step 3

Cook the mixture for about 8-10 minutes, or until the strawberries break down and create a thick syrup.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract. Allow the syrup to cool completely. Optionally, strain the syrup through a fine-mesh sieve to remove any strawberry seeds or pulp.

Step 5

To assemble each ice cream soda, spoon about 2-3 tablespoons of the cooled strawberry syrup into the bottom of a tall glass.
