Ingredients

  • 8 oz Fresh strawberries
  • 1 cup Unsalted butter (softened)
  • 4 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 2 tbsp Heavy cream (optional)
  • 1 pinch Salt

Directions

Step 1

Wash the fresh strawberries thoroughly and remove the stems.

Blend the strawberries in a food processor or blender until smooth to create a strawberry puree.

Strain the puree through a fine mesh sieve to remove seeds. Discard the seeds and set the smooth puree aside.

In a large mixing bowl, beat the softened unsalted butter using a hand mixer or stand mixer on medium speed until light and fluffy (about 2-3 minutes).

Gradually add the powdered sugar, one cup at a time, while continuing to mix at low speed. Scrape down the sides of the bowl as needed.

Add 4 tablespoons of the strawberry puree to the mixture and beat until fully incorporated. If the frosting is too thick, add 1 tablespoon of heavy cream at a time until it reaches your desired consistency.
