Ingredients

  • 500 grams fresh strawberries
  • 100 grams sugar
  • 2 tablespoons lemon juice
  • 120 milliliters water
  • 10 grams gelatin powder
  • 200 milliliters whipping cream
  • 1 teaspoon vanilla extract

Directions

Step 1

Wash the strawberries thoroughly, remove the stems, and cut them into halves.

Step 2

Place the strawberries, sugar, and lemon juice in a medium saucepan. Add 120 milliliters of water and cook over medium heat until the strawberries are soft and start to release their juices, about 5-7 minutes.

Step 3

Transfer the strawberry mixture to a blender or use an immersion blender to puree it until smooth. Strain the puree through a fine-mesh sieve into a bowl to remove seeds.

In a small bowl, sprinkle the gelatin powder over 2 tablespoons of water and let it sit for 5 minutes to bloom.
