Ingredients

  • 4 cups fresh strawberries, hulled and halved
  • 2 cups ripe figs, stems removed and chopped
  • 2.5 cups granulated sugar
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 0.5 cup water

Directions

Step 1

In a large heavy-bottomed pot, combine the strawberries, figs, and water over medium heat. Stir gently to mix the fruits together.

Step 2

Add the granulated sugar, lemon juice, and lemon zest to the pot. Stir until well combined.

Step 3

Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking or burning.

Step 4

Once boiling, reduce the heat to medium-low and let the mixture simmer. Use a potato masher or the back of a spoon to gently break down the fruit as it cooks, creating a chunky texture.

Step 5

Simmer the mixture for 35-45 minutes, stirring occasionally. Test for doneness by dipping a spoon into the preserve and letting it cool slightly. If it thickens and holds its shape on the spoon, it's ready. Alternatively, you can test by placing a small drop on a cold plate and checking for a gel-like consistency.

Step 6

Remove the pot from heat and stir in the vanilla extract. Mix well to incorporate.

Step 7

Carefully ladle the hot preserves into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims clean with a damp cloth and seal with sterilized lids.

Step 8

If preserving for long-term storage, process the jars in a boiling water bath for 10 minutes. If not, allow them to cool to room temperature and refrigerate for up to 3 weeks.

Step 9

Serve the Strawberry Fig Preserves on toast, biscuits, pancakes, or as a topping for yogurt and ice cream. Enjoy!
