Ingredients

  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Unsalted butter, softened
  • 1.75 cups Granulated sugar
  • 4 units Large eggs, room temperature
  • 2 teaspoons Vanilla extract
  • 1 cups Whole milk
  • 3 cups Fresh strawberries, hulled and sliced
  • 2 cups Heavy cream, chilled
  • 0.5 cups Powdered sugar
  • 0.5 cups Strawberry jam

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, use a hand or stand mixer to cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Mix in the vanilla extract.

Step 5

Alternately add the dry ingredients (flour mixture) and milk to the wet ingredients, starting and ending with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Step 8

While the cakes are cooling, prepare the whipped cream frosting. In a large bowl, beat the chilled heavy cream and powdered sugar with an electric mixer until stiff peaks form. Keep refrigerated until ready to use.

Step 9

Once the cakes are fully cooled, spread a thin layer of strawberry jam on top of one cake layer. Arrange half of the sliced strawberries over the jam layer.

Step 10

Spread a layer of whipped cream frosting on top of the strawberries, then place the second cake layer on top.

Step 11

Frost the top and sides of the cake with the remaining whipped cream frosting. Decorate with the remaining sliced strawberries on top.

Step 12

Refrigerate the cake for at least 1 hour before serving to allow it to set. Serve chilled and enjoy!
