  • 2.5 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 pieces Large eggs
  • 2 teaspoons Vanilla extract
  • 1.5 cups Fresh strawberries, pureed
  • 0.5 cup Whole milk
  • 0.5 cup Strawberry jam
  • 2 cups Heavy whipping cream
  • 0.5 cup Powdered sugar
  • 1 cup Fresh strawberries, sliced

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy release.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 3-4 minutes.

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Reduce the mixer speed to low and gradually add the dry ingredients in three additions, alternating with the strawberry puree and milk, beginning and ending with the dry ingredients. Mix until just incorporated. Do not overmix.
