Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 0.75 cups unsalted butter, cold
  • 1 None large egg
  • 1 teaspoon vanilla extract
  • 3 cups fresh strawberries, hulled and diced
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 0.25 cups light brown sugar

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Cut the cold butter into small cubes and use a pastry cutter or your fingers to blend it into the flour mixture until it resembles coarse crumbs.

Step 4

Add the egg and vanilla extract to the mixture and stir until combined. The dough will be crumbly.

Step 5

Press half of the dough mixture firmly and evenly into the bottom of the prepared baking pan to form the crust.

Step 6

In another bowl, combine the diced strawberries, cornstarch, lemon juice, and light brown sugar. Gently mix until the strawberries are evenly coated.

Step 7

Spread the strawberry mixture evenly over the crust layer in the pan.

Step 8

Crumble the remaining dough mixture over the strawberry layer, ensuring some of the strawberries are peeking through.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the strawberry filling is bubbling.

Step 10

Remove from the oven and let the bars cool completely in the pan before lifting them out using the parchment paper overhang.

Step 11

Cut into 12 squares and serve. Store leftovers in an airtight container in the refrigerator for up to 5 days.
